Apple and Walnut Muffins

PhD Watch - Time Minus 4 Months (...nearly 3 months)

I found out I was (miraculously) pregnant 8 weeks into my PhD and if you had told me then (nearly 4 years ago) that I would be here, two children later in the count down to the end I would not have believed you.

Kids Green Smoothie

A very simple healthy smoothie perfect for kids which has some great green stuff in it, including broccoli and avocado. The banana and berries provide natural sweetness, plus berries contain great antioxidants for little immune systems. Best of all this has passed the taste test of little man, in fact we made this two days in a row as he loved it so much (and being able to work the blender!).

Breakie Bliss Ball

Not all of my creations work out but this one is a winner!! Perfect to have for a small breakfast on the go or to get something into you with a 5am wake up....actually these bliss balls will make a great snack option full stop! Chocolate Avocado Brownie

Food is my love language and my latest creation has been made with just that, a lot of love....plus a few of my all time favourite ingredients, coconut oil, avocado, walnuts. This recipe only uses a bit of honey for some sweetness so go on, treat yourself (I licked the spoon and the bowl!).

Indian Inspired Chicken Crock-Pot

The beauty of a crock-pot (also called a slow cooker) is that you can prepare your dinner in the morning so that when 5 pm hits, you have this beautiful warm meal ready to go. Feeding Fussy Toddlers

Food demands, refusing food, throwing food, wandering off from the table and leaving a trail of mess….food battles and fussy eaters is a common challenge for parents.

As a mum I have full empathy for this - just because I am a nutritionist does not mean I am immune to such behaviour. I have had to hold back my own frustrations and even tears at some of the behaviour exhibited by my toddler....
