Simple Coconut Flour Cookies
These cookies are made from coconut flour. Coconut flour is made from coconut solids which have been ground into a very fine powder. This product is increasingly being sold in health food shops and your local supermarkets. It is a great gluten-free alternative to normal flour.
These little delicious morsels of goodness will only take a couple of minutes to whip up and are just perfect for cookies lovers wanting a healthier option. The addition of walnuts/sliced almonds just boosts the protein, fiber and good fat intake even higher...a little warning though - even the batter tastes good!
7 tablespoons of coconut flour
6 tablespoons of butter (softened)
2 teaspoons of honey
2 tablespoons of walnuts/sliced almonds (optional)
Pinch of salt
- Pre-heat the oven to 180° C and place a sheet of baking paper on a baking tray.
- Put all ingredients in a food processor and pulse until the batter is smooth (the batter will be sticky).
- Roll batter into little balls and place on the baking paper, lightly press down with a fork.
- Bake for approximately 10-12 minutes or until the golden. They will turn golden quickly when they are ready so keep a close eye on them. Allow to cool and enjoy!
The recipe makes approximately 12 small cookies. Due to the nature of the ingredients these will go off in a couple of days, hence the small serving sizes of the ingredients but you can always double the mixture. For those that are unable to have egg - I did originally make these without an egg. The cookies did turn out, however was quite crumbly.
The cookies have been taste-tested by our 2 year old - giving his seal of approval - so great for children!!
