Baby Led Weaning Pancakes - Gluten-Free, Grain-Free, Dairy-Free & Nut-Free
Makes 12 Mini-Pancakes
In my best selling Baby and Toddler Cookbook I have three great grain-free mini pancake (also known as pikelets) recipes. This cookbook was first publishing in 2019 when I was pregnant with my third son (Ray).
Earlier this year (it's now 2023), after a decade of researching and working in the field of baby and toddler nutrition I released my Baby Porridge with Pumpkin mix. This was to offer a nutritious alternative to the old-school, nutrient poor, baby rice. My beautiful third son also features on the packaging here.
For any new followers you can read my popular blog on why I don't recommend baby rice here. I first wrote this blog waaaaaay back in 2015 and it was a huge catalyst for my starting solids guide (some of you may remember this). This was followed by The Nourished Baby.
This recipe is a delicious combo of this initial grain-free pancake in my cookbook and of course my Baby Porridge with Pumpkin mix. I mean it is almost not really a recipe as it's so easy and moreover is simply another use for my innovative Baby Porridge - which yes already has pumpkin in it!!
Can this be used for toddlers too - yes! It's so packed with nutrients including pumpkin, flaxseed, coconut and chickpeas. Plus it's gluten-free, grain-free, dairy-free and nut-free.
Just as a note on the eggs - eggs are a top 8 allergen and need to be introduced separately (twice) to test for a potential reaction. You might find this blog here on eggs helpful. As the mixture is free from grains and gluten I find that you do need the eggs to help hold the mini pancakes together.

Ingredients:
Ingredients:
*2 Eggs
*2 Bananas
*1/2 cup DJK Baby Porridge with Pumpkin Mix
*Olive oil (to fry)
Method:
Break eggs into a bowl and mix with a fork.
Mash bananas with a fork and add to the bowl.
Add in the DJK Baby Porridge and whisk well.
Place a fry pan on medium heat, add olive oil when hot.
Spoon in a tablespoon of mixture onto the pan for each pancake. Flip when golden and cook the other side. Depending on your pan size you can cook multiple mini pancakes at once. Serve when slightly cool.
