Strawberry and Oat Muffins
On Sunday I took all the boys strawberry picking. It was something I have been wanting to do for ages with them. I cannot recommend this as a fun family activity enough! Something about being outdoors in the strawberry fields picking your own lush fruit and seeing the boys so happy doing so just made the trip.
With three boys everyone got their own bucket. This was mainly out of my own sanity so there was no fighting. The result meant lots of strawberries and so I just had to create a new recipe. These muffins are super simple - one of my one bowl wonders which also helps to keep dishes down.
I have used spelt flour but you can easily substitute for all purpose flour, wholemeal flour or use gluten-free flour (I would add 1/2 a teaspoon of xanthan gum if going gluten-free). If you are not sure about oats being gluten-free or if they are right for you my blog here will help. Likewise with the almond milk you can easily substitute this for your milk of choice.

Preheat the oven to 180 degrees (normal bake) and lightly grease a muffin tin with coconut oil.
In a large bowl place in all ingredients except the strawberries. Bring together with a whisk.
Gently fold in the strawberries and then spoon mixture evenly into the muffin tin.
Lightly sprinkle each muffin with a little extra sugar.
Place in the oven and bake for approximately 30 minutes or until the top goes a little golden.
Allow to cool just slightly before eating!
