Healthy Party Crackles (Dairy & Gluten Free)



Chocolate party crackles are something I remember from my own childhood. I first created these for Arjun's 5th birthday party.  I had been playing around with a healthier version and found it quite simple to re-create. Free of refined sugar, with just a dash of honey for sweetness, they are also dairy-free and gluten-free!

Since I published these I made a few tweaks to the original recipe for my family cookbook Feed the Tribe to make sure these serve 12 so this is the updated recipe from my cookbook.

Ingredients:

3/4 cup coconut oil, melted

1 1/2 tbs honey

1 tsp of vanilla essence

1 1/2 tb of cocoa powder

2 cups of rice bubbles 

3/4 cups of desiccated coconut



Method:

In a muffin tray place in paper liners and set aside.

Melt coconut oil and add to a large mixing bowl. Mix in honey and whisk well (do not worry how it looks at this stage!). followed by the vanilla essence and cocoa powder.

Quickly add in the rice bubbles and coconut and gently fold all together.

Spoon evenly into the paper liners in the muffin tray and place in the fridge for two hours or freezer for 10 minutes.
