Yummy Olive and Cheese Muffins

Another Pure & Simple creation of mine!!! If you love olives then you will looooove these delicious muffins!! Aside from their taste and amazing ability to go very well with wine and cheese....olives have incredible health benefits! Olives are anti-inflammatory so a great immune system booster, especially in times of oxidative stress and viral illness. There are also known as anti-cancerous. This is due to the abundance of phenolic antioxidants which help to neutralize the damaging effects of free radicals on the body’s cells. Olives also contain high levels of 'good fats' which play an essential role in removing cholesterol and triglycerides from the body. Like all my recipes these are so simple to make - literally put everything in a bowl and mix!

Ingredients:

1 and 1/2 cups of whole-meal flour

2 tsp of baking powder

1 egg

1 cup of milk

1/2 cup of sliced black pitted olives (or 3/4 if you are a real olive lover)

1/2 -3/4 cup of grated cheese

1/2 cup of spinach leaves, chopped finely

1/4 cup of extra-virgin olive oil

Pinch of salt

Pumpkin seeds to sprinkle on top (optional)

Directions: 1. Pre-heat the oven to and grease a muffin tray (normal size or mini muffin tray works just as well) 2. Combine all ingredients into a large bowl and mix to combine. 3. Place mixture into the muffin tin (about 3/4 full), sprinkle with pumpkin seeds 2014-11-10 17.19.01 4. Bake for approximately 10-15 minutes, or until muffins go slightly golden on top. (Makes about 10 medium sized muffins) These are best served warm with a splash of butter hmmmmm! 2014-11-10 18.09.01 Master Bam Bam (2 years old and with chicken pox!) did give these his seal of approval....though my disclaimer here is that he is really not used to sweet baking and these are definitely in the 'healthy/earthing' tasting camp so I cannot promise all children will love these (no worries.... more for mums!!) 2014-11-10 18.24.53 xxx Dr Julie Bhosale
